Quinoa Brownie Waffles

Quinoa Brownie Waffles

  • 2 cups cooked quinoa
  • 3/4 cup organic smart balance dairy free butter alternative, melted or coconut oil
  • 1/3 cup milk of choice (I used almond milk)
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cup coconut sugar
  • 1 cup coco powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt


  • Preheat a waffle iron. Blend smart balance/coconut oil, milk, eggs, and vanilla extract in a blender until combined. Add 2 cups cooked quinoa and blend until smooth, scraping down the sides of the blender with a rubber spatula as needed. Add remaining dry ingredients and blend until smooth. Pour batter into greased waffle iron. Check after 3 minutes. May take 5-6 minutes. Top with whipped cream. Enjoy!
